The purchase file shows spending, but not how much was bought or used. Dish costs are estimates. Check that supplies and fuel bills are not counted twice.

VAT collected and purchase adjustment

Purchase amounts include VAT, as confirmed by the owner. We have removed estimated VAT on matched ingredients from costs. Profit / loss already includes this change. Do not add it again.

Bills still need checking. These are estimates, not a confirmed refund or final tax bill. Other eligible purchases may reduce VAT further.

What the figures mean

  • Sales: Money from customer orders, with VAT left out.
  • Purchase costs after VAT adjustment: purchase spending less estimated recoverable VAT on matched ingredients. Includes cleaning, packaging and fuel.
  • Estimated recipe cost: what the ingredients may cost for the dishes sold. Portions and prices still need checking.
  • Profit / loss: sales minus purchases, order fees and running bills. A negative amount is a loss. This includes the estimated purchase VAT adjustment.
  • Sales needed to cover costs: the daily sales target at which the restaurant makes neither a profit nor a loss. It assumes costs behave as planned.
  • VAT: tax collected for the government. It is not extra sales or profit.

What still needs checking
